HOW TO MAKE 15 MINUTE CONGEE
2 cups cooked rice
6 cups boiling water
1 teaspoon chopped ginger
1 sliced Chinese mushroom
4 oz. sliced chicken
1 duck egg (1000 year old egg)

Bring 6 cups water to a boil. In a pan, add 2 cups rice and 2 cups boiling
water. Use a hand mixer to break up rice. You can also use a blender to
break up the rice. Add 4 cups boiling water to the rice mixture. For thicker
congee, add less water. For thinner congee, add more water. Add ginger,
Chinese mushroom and chicken to the congee. Simmer at medium heat
for 15 minutes or more. Congee will thicken if simmered longer. The duck eggs can be
chopped up and added into the congee or place on top just before serving.
You can add your favorite toppings, such as beef, pork, green onions, cilantro,
peanuts. Sometimes I add some potato chips as well. Enjoy!
